Cream of Asparagus Soup

I mentioned in a previous post that this cream of asparagus soup recipe should be tucked away for the fall but if we keep getting rainy days like today, this soup would be of comfort. Not to mention that you can buy local asparagus now! I saw beautiful stalks at Crampton's and Vic's Fruit Market this past weekend. A little pricey ($5.50 a pound) okay, maybe a lot pricey but you can't be local!

Cream of Asparagus Soup

Ingredients for soup:

  • Sea Salt
  • 2 tbsp extra-virgin olive oil
  • 1 large bunch of asparagus, ends trimmed, cut into 2-inch pieces
  • 2 stalks celery, chopped (since M. hates celery, we don't add it to the recipe)
  • 1 large onion (we also don't add this because of M., let me know how it tastes!)
  • 2 quarts faux chicken or vegetable stock 
  • 1 bay leaf
  • 1 cup thick cashew cream plus more for garnish (see below)
  • freshly ground pepper
  • 2 cups of fresh baby spinach
Directions for soup:
  • Place a large stockpot over medium heat. Sprinkle the bottom with a pinch of salt and heat for 1 minute and then add the oil. Heat for 30 seconds but don't let the oil smoke. This will create a nonstick effect.
  • Add the asparagus, celery, and onion and saute for 6 to 10 minutes, until the celery is just soft. 
  • Add the stock and bay leaf, bring to a boil, then reduce the heat and simmer for 30 minutes. 
  • Add the cashew cream and simmer for an additional 10 minutes. Remove and discard the bay leaf. Season to taste with salt and pepper.
  • Working in small batches, pour the soup into a blender (the heat will push the lid off so be careful) or better yet, use an immersion blender! It's worth the money. Trust me. Make your way to Bed, Bath and Beyond. We bought ours for $42.
  • Add the spinach to the last batch (if working with a blender) and then incorporate all the batches together. 
  • Ladle the soup into bowls and add cashew cream by tablespoon full and stir. 
  • Enjoy!
Ingredients for cashew cream:
  • 2 cups of raw cashews (not pieces) rinsed very well under cold water
Directions for cashew cream:
  • Put the cashews in a bowl and add cold water to cover them. cover the bowl and refrigerate overnight
  • Drain the cashews and rinse under cold water.
  • Place them in a blender with enough cold water to cover them by 1 inch
  • Blend on high for several minutes until very smooth



This recipe could easily be turned into cream of broccoli soup! Instead of asparagus, add broccoli. Cheaper option to boot!

A Mint-y Good Time: Part Two

Recipe as promised!

Minted Mango Sorbet 
a la Kitchen Aid Mixer Ice Cream Maker 


If you do not use a Kitchen Aid mixer, use the desired Ice Cream maker and follow their instructions.

Directions:

  • 1 cup of sugar
  • 2 cups of whole milk (or soy milk)
  • 1/4 cup of light corn syrup
  • 3 ripe mangoes- peeled, seeded, chopped ( 3 cups)
  • 2 tbs of fresh lime juice
  • 2 tsps finely chopped fresh mint

Instructions:
  • In a medium saucepan, combine sugar, milk, and corn syrup. Heat over medium heat, stirring often, until very hot but not boiling. Remove from heat; set aside.
  • Place mangoes and lime juice in food processor work bowl; use the multipurpose blade to process until smooth. Add mango mixture and mint to milk mixture. Cover and chill thoroughly, at least 8 hours.
  • Instruction with Kitchen Aid: Assemble and engage freeze bowl, dash; and drive assembly as directed in attachment instructions. Turn to STIR (Speed 1) for 7-12 minutes or until desired consistency. Immediately transfer sorbet into serving dishes or freeze in an airtight container.

A Mint-y Good time!

I hope everyone enjoyed the extra day of rest this past weekend! M. and I were very busy. We have officially felt what it's like to be home owners. You know, besides paying the mortgage and other bills. The proof was in M. and I going to Home Depot/ Rona this past week on three separate occasions to buy paint supplies, a lawn mower and additional biodegradable bags for all the leaves the previous owners didn't rake up in the fall. Oh, right!  We also needed a rake so we bought that too.

We started off the weekend (Thursday) with this waiting on the front step...





Right away I texted my friend A. to come over this weekend to try this baby out! We decided to tackle the mango and mint sorbet recipe.  Mostly because I am a sucker for mint. What was too bad is that I had to do all the prep work the night before since all of the components needed to be cooled over night.   I didn't take any pictures of the process of mixing the mango and mint together and then simmering it on the stove top because it looked like runny eggs with spinach. Thank goodness it tasted better than it looked! After the mixture cooled over night, you hook up the actual ice cream maker bowl (that has been in the freezer for at least 15 hours) and add the mango mixture slowly while the Kitchen Aid mixer does its thing.







Voila! With a few fresh mint leaves it was the perfect treat that was refreshing, healthier (compared to actual ice cream), very easy to make and inexpensive. I purchased frozen Presidents Choice (from Superstore) mango, fresh mint, a 1 litre of soy milk and white corn syrup which came to $11. Not bad! This was a dessert that easily could have served 6 people but A. and I were not prepared to share.

M. and I have been planning to paint the living room and dining room for quite some time and after we decided on the colours, we were ready to tackle the project on Sunday. But before we get into that, we needed a nourishing breakfast with lots of protein to get us through the day.

                                              

M. made us an omelette with broccoli, red pepper, feta and spinach. After that hearty meal, we were ready to go!

I love, love, LOVE the blue accent walls. The other wall is a grey which you can sort of tell. Over all, much better than the taupe me thinks.


After a long day of painting and doing some yard work, M. and I decided to BBQ. I made smoked tofu and grilled some asparagus and baby potatoes.


I also indulged in one of these.

Unfortunately due to a dreary Monday, M. and I weren't able to continue with most of our chores but we did make this fabulous soup! It's a favourite of ours. An asparagus and spinach soup with cashew cream. It's vegan to boot. 



It was also perfect as leftovers for another rainy Tuesday.

Recipes for the sorbet and soup to follow :)  The sorbet will be worth trying out this weekend but maybe keep the soup recipe tucked away for the upcoming fall. After all, I hear sunshine and warmth is (finally) in our future.

#TGIF

Good Morning!

I bet everyone is looking forward to the LONG WEEKEND!!! I certainly am. It won't all be relaxing but I will certainly have fun working on my home and trying out a new cooking contraption and recipe!

On Saturday, my friend A. and her husband will come over for pizza Saturdays and while her husband and M. go to a concert later that evening, A. and I will try and figure out how to work this thingymabob.

If you remember a previous post, I have been drooling (literally) over the Ample Hills Creamery book and I found it in McNally a few weeks ago. Now that I have the ice cream maker, the possibilities are endless. Since A. is vegan, the first recipe I will be trying is mango and mint sorbet from the recipe book provided by Kitchen Aid. I can't wait! I am going to get so fat this summer...


M. and I have decided to paint our living room and dining room on Sunday and as you can see, we have already starting some of the painting. It was our way to 'test' the colours out. Apparently it is a big no no according to some design magazines I have been reading, but really, how are you supposed to tell how light or dark this blue really is without taking a risk and painting half a wall?




We decided to do accent walls. Some walls will be blue but most of the walls will be grey.  We are pretty pumped!

Yup, this weekend is going to rock! Hope everyone enjoys there's too!!!

Weekend Eats

Wasn't it gorgeous this past weekend? It was so nice to dust off the patio furniture, grab some wine and sit outside with a home made pizza. This Saturday's edition included red pepper, seitan, feta and broccoli.







Of course, this past Sunday was Mother's Day and M. and I decided to invite both his family and mine over for brunch to celebrate. On the menu, french toast casserole, roasted potatoes, scrambled eggs with vegetables and fruit salad.

French toast with frozen berries, cream cheese and topped with chopped pecans. I shared the recipe previously, here.


M. made the eggs with a Greek twist. It had spinach, red pepper and feta.

My latest purchase from Oliv. I picked up a coconut white balsamic vinegar and it is AMAZING drizzled on fresh fruit or plain yogurt. If you love coconut, you should consider purchasing this $32 bottle. It's pricey but it is such a treat.

Lately

Yay for the weather finally turning! It is time to BAR-BA-Q! Put your hands in the air like you just don't care!

M.'s parents generously bought us a BBQ as a engagement/ house warming/ wedding shower present and we put it to good use the other night. Probably the best part of owning a BBQ was that we didn't know how to hook up the propane tank or frankly how to turn it on (we couldn't find the power button ha ha!) and my dad had to come over to show us. After we figured out the logistics, we got right down to the nitty gritty and made a feast!


Veggie burgers with roasted red pepper and gouda cheese, BBQ'D broccoli, asparagus and potatoes. I also made the same lentil salad that A. made for us here. It was all delish! I added some diced red peppers to the recipe.

 The next day, M. and I had to go run a few errands and I came across what ended up being an expensive impulse purchase.



Let me introduce you to the rice cube. It's goal: make rice cool.




It's a way to make sushi without the nori. I haven't tried it out yet but at $20, it better make my rice look like a piece of art! Check out their official website here. I found it at Benjamin Moore paint store on Kenaston. Most random item to have in their store, I think!

A little Mo' food, please

My friend Mo from Ontario was in town for a few days this past week. Even though she grew up here, the food scene has certainly changed (except for a few old favourites) in the past 10 years and she wanted to try some new restaurants that I have been enjoying lately. This was slightly a challenge since (as you know if you follow this blog) I have been trying some new amazing new eateries around town lately and she was only here for a limited time. I really wanted to show her what Winnipeg had to offer. SO here we go...

Our first stop was at the Oakwood Cafe in South Osborne for breakfast.


Cafe Mocha's



Eggs benedict with a california twist. English muffin topped with goat cheese, guacamole, tomato, egg and hollondaise sauce. It has very rich and creamy textures. It was really good. A little pricey at $15 but well worth it. The side of fruit and potatoes were included in the price.



 You will have to forgive the next few pictures coming up. We went to the Grove in River Heights later that night. They have poutine but with meat gravy. The waiter cleverly arranged for me to still have poutine but instead of gravy, they used the butter chicken veggie sauce, but, obviously without the butter chicken. It was really fantastic. My new favourite dish there!


It was quite dimly lit there... hence the darker pictures.



I also had some donuts. They were okay. Nothing too different or unique about them... except they were excellent for breakfast the next morning!


I also snuck in a creme brule.

The next morning, we went off to Boon Burger in the Exchange district. Perfect after a rough night of too much food and spirits.


I enjoyed a cocoa berry milkshake with coconut milk.



I also chose the special of that day which was a curry 'chicken' patty with curry mayo and toppings. 


It was a good idea to not get any sides. I was very full after!



Later that night, we made a couple pizzas. The top pizza was made with broccoli, red pepper and feta as toppings.


For this pizza we used pesto, goat cheese and kale and we even made a stuffed cheese crust. Pizza Hut style! Sort of... 


If that wasn't enough food for one day, we stopped at BDI and waited in the rain. Yes, there was a line up and we waited for over 20 minutes. I picked a Goog which is a blueberry milkshake topped with bananas and then a hot fudge sundae and of course whipped cream and a cherry on top! Amazing.


The next day we went to Qdoba Mexican Grill for lunch which is an American fast food chain that made its way to Winnipeg. It officially opened last week in the Polo Park area. 


I chose a naked burrito which is essentially the innards of a burrito but without the tortilla. This is what it looks like all neat and tidy.


And this is what is looks like once I started digging into it. For $9, you can have a veggie naked burrito with black beans, fire roasted corn, two different salsas, guacamole, sour cream and shredded lettuce! It is expensive (not too much more than Burrito Del Rio) but very good. 

 The next morning we made our way to Kawaii Crepe in the Osborne Village. As you can tell by the name, their specialty are crepes.  They have a variety of crepes that come in savoury or sweet form with options of crepe batters that can also be vegan or gluten- free. They even have savoury options that may come with meat but can easily be substituted with tofu. Gotta love that!



I wanted a sweet option.



I also decided to get a peach apple bubble tea with tapioca pearls (vegetarian). It's not very often I have bubble tea but I really loved the peach and apple combo.



For the crepe, I picked the Third Wheel crepe which has Nutella, peanut butter and banana. It was bananastic!


Later that afternoon, we dived into these truffles that we picked up from Godiva the day before. It was delectable. Always fun to treat oneself... Well, that's all that we've been doing this past week but you get the picture.


Finally, for Mo's last night in town, we went to La Fiesta for dinner which is an El Salvadorian restaurant. La Fiesta used to be located on Ellice before it moved to St. Anne's but it's a place that Mo. and I used to go when she still lived in Winnipeg 10 years ago, and it is still one of our favourite restaurants. Same owners and quality of foods. But, you need to be patient when you come here because they make everything from scratch (even the tortilla's) and so, you will be waiting for your food for awhile.


I started off with a lime margarita.


I then ordered a vegetarian style burrito poderoso and corn tamale. The burrito is AMAZING and at $12 a pop, still one of the best i've ever had. I always order this dish when I come to La Fiesta because every time I decide that I will try something different, I am not disappointed with the food per se but I always wish I ordered this dish instead. The corn tamale is also very good. It tastes like cream corn but with actual fresh corn. Not something that has been sitting in a can for 6 months.


This (final) meal is a sad meal because this is from Stella's at the airport. This is where Mo had to say bye to me and Winnipeg. I chose a simple two poached eggs and toast with their home made strawberry jam since it was quite early. Stella's never disappoints. Hey, did you know that Stella's is going to move into the location (I heard) from Chez Cora's in St. Boniface? Stella's is taking over Winnipeg!

All in all, Mo had a lovely time in Winnipeg (despite the weather) and she loved all of the cool new (and old) restaurants Winnipeg has to offer. Boon burger and La Fiesta are her favourites.
